Abstract
Práce se zabývá sledováním rychlosti poklesu teploty pokrmů (vařená rýže, bramborová kaše) během přepravy kurýrními službami. Pokrmy byly skladovány ve venkovních podmínkách po dobu 240 minut. Sekundární obal byl naplněn různým počtem misek, které byly umístěny ve vrstvách, a v každé vrstvě potravin byla měřena teplota. Během přepravy teplota pokrmů klesala, nejnižší teplota (P<0,05) byla zaznamenána v nejméně naplněném sekundárním obalu. Mezi teplotou přepravované rýže a bramborové kaše nebyly zjištěny žádné rozdíly (P>0,05). Vyšší teplota pokrmů (P<0,05) byla zjištěna při umístění do polypropylenové nádoby (krabice).
The work deals with monitoring the rate of temperature decrease of dishes (cooked rice, mashed potatoes) during transportation by courier services. They were stored under outdoor conditions for 240 min. The secondary containerwas filled with a different number of bowls, which were placed in layers, and the temperature was measured in each layer of food. During transportation, the temperature of the dishes decreased, the lowest temperature (P<0.05) was recorded in the least filled secondary packaging. There were no differences (P > 0.05) between the temperature of transported rice and mashed potatoes. Higher (P < 0.05) dish temperature was detected when placed in a polypropylene container(box)
